Chef Takashi places great importance on meticulous preparation of ingredients, such as selecting Bluefin Tuna from Nagasaki for its smooth and rich texture, or using Kinki Fish, which is full of fat and offers a sweet, juicy taste during the cold season, to create a dish with crispy skin and tender, melt-in-your-mouth texture. Every dish is precisely calculated for heat and cooking time.



The uniqueness lies in the creation of new flavors that can only be found here, such as Amadai Matsukasayaki, a dish featuring amadai fish fried until the scales are crispy while the flesh remains sweet and juicy, served with a beautiful spinach sauce. Alternatively, you can choose A5 Wagyu beef from Iwate (Iwate Wagyu), paired with snow salt. Awayuki Shio enhances the flavor of the meat, making it stand out.
